Pumpkin Bars are a nice sweet treat to have around your home or to bring to a gathering so you won't over-indulge in other overly sweet, heavily processed desserts. Prep Time: 20 minutes Cook Time: 30-40 minutes Servings: 8 to 10 people Ingredients: • 1/2 cup pumpkin puree, (no sugar added) • 1/2 cup almond butter • 1/4 cup maple syrup • 2 eggs • 2 tsp. pumpkin pie spice • 1 tsp. vanilla extract • 1/4 tsp. salt • 1/2 tsp. baking soda Glaze: • 3/4 cup pecans • 2 Tbsp. coconut oil • 1/4 cup water • 1 tsp. vanilla extract • Pinch of salt Directions: 1. Preheat the oven to 350˚ and grease an 8x8" pan. 2. Combine all of the ingredients in a medium bowl and mix well until a smooth batter forms. 3. Pour the batter into a greased pan and bake for about 30 minutes, until the edges are golden brown and the center is firm. 4. For the glaze, combine all the ingredients together in a blender and process until smooth and creamy. 5. Allow to cool completely in the pan before glazing.
